I haven't been much of a salad eater until now. I have had trouble chewing and swallowing lettuce, and I felt like I needed to concentrate on higher calorie food to maintain my weight.
But I know salads can be very healthy, and I am enjoying experimenting with different ingredients. My salads are not unique or elaborate. But I have liked everything I've made. And it feels good to create something that is fresh, healthy, and usually quick to assemble (some faster than others). Here are a few:

I want to experiment more. I know yogurt is a healthier alternative to mayo, but I haven't tried that. I've also made tuna salad, salmon salad, egg salad with avocado, and pasta salad with chicken.
